Ingredients
Chicken
- 01 1.5 lb bone-in, skin-on chicken thighs
- 02 1 tsp olive oil
- 03 Salt and pepper, to taste
- 04 1.5 tbsp garlic powder
- 05 1 tbsp smoked paprika
- 06 1 tbsp thyme or oregano
- 07 1/4 tsp cayenne pepper
- 08 1 tbsp baking powder (for crispy skin)
- 01 1/2 cup Greek yogurt
- 02 2 tbsp mayo
- 03 2 scallions
- 04 2 large handfuls fresh cilantro
- 05 1/2 jalapeño, seeds removed if preferred
- 06 Juice of 1.5 limes
- 07 1/2 tsp chipotle powder
- 08 A couple pinches of salt
- 01 4 Persian cucumbers, thinly sliced
- 02 3 tbsp red onion, finely diced
- 03 2 tbsp cilantro, finely chopped
- 04 1 tsp olive oil
- 05 Juice of 1/2 small lemon
- 06 A pinch of salt
- 01 1 box low-carb rice (or regular rice, quinoa, or cauliflower rice)
- 02 1 avocado, sliced
Steps
Chicken
- Add the chicken thighs to a bowl. Drizzle with olive oil and season with salt, pepper, garlic powder, smoked paprika, thyme (or oregano), and cayenne.
- Add the baking powder and mix well to coat — this is what crisps the skin.
- Bake at 400°F for 40 minutes. Remove the skin before serving, if preferred.
- Process the Greek yogurt, mayo, scallions, cilantro, jalapeño, lime juice, chipotle powder, and salt until smooth.
- Taste and adjust the seasoning.
- Combine the cucumbers, red onion, and cilantro in a bowl.
- Drizzle with olive oil and lemon juice, add a pinch of salt, and mix. Taste and adjust.
- Cook the rice according to package directions.
- Build each bowl: rice at the base, chicken on top, two large spoonfuls of salad, avocado slices, and a drizzle of sauce.
